Meet the Chef
Southern California native, Javier Crespo has had a passion for cooking for as long as he can remember. Literally born in his grandmother’s kitchen, food was at the heart of his family. He worked alongside his grandma and mom and refining his technique in the kitchen, before enrolling in culinary school. With each of his recipes, Javier strives to inspire a love of cooking in others, imparting bits of culinary wisdom in each one. He’s an avid traveler, finding food one of the most universal and communal experiences. No matter the language or culture, there is nothing as bonding as sharing a meal.
Semolina Flour Ingredient Spotlight
The pasta dough you’ll use to make your second course is a blend of semolina and all purpose flour. Semolina flour is made from durum wheat. It is golden in color and looks similar to cornmeal. Semolina flour is incredibly high in gluten and protein, which makes it perfect for pasta making. The gluten helps the pasta to hold its shape.When mixed with eggs and a little olive oil and water, the dough is tender and luscious. Coated in a rich white wine butter sauce that truly lets the texture and flavor of the hand-cut pasta shine.
