Born and raised in Los Angeles, Chef Yuji, has always had a passion for cooking. As a child, one of his favorite memories was toting around the grocery store with his mother. Shopping every aisle and discovering new foods were his favorite activities.
Today, Chef Yuji shops with the same enthusiasm, but now with a purpose.
As the Executive Chef of one of the most well-known Asian restaurant brands, P.F. Chang’s, Chef Yuji is constantly searching for new and fresh ingredients to incorporate into their dishes.
“Working at PF Chang’s presents many culinary challenges, but also comes with great rewards”, states Yuji, which is something that has kept him in their corporate kitchen for over five years.
Before starting as the creative culinary chef at P.F. Chang’s, Chef Yuji was used to a different process. “It’s not your typical mom and pop restaurant”, he continues, “there’s a lot of strategy involved—we operate in a very methodical manner”.
But that’s not to say that the restaurant falls into the standard chain reputation. “People don’t realize how much care goes into the process—every one of our restaurants has a scratch kitchen”. P.F. Chang’s Farm to Wok food philosophy means the culinary team at each location does everything from butchering the meat to chopping the vegetables and even hand rolling dim sum in-house.
The amount of detail that goes into every dish is surprising for this size of restaurant brand, which drives Chef Yuji’s passion.
